Sheet Pan Gnocchi with Sausage, Tomatoes, and Zucchini

Ingredients

  • 2-3 tbsp olive oil
  • 16 oz shelf-stable gnocchi, no need to pre-cook!
  • 12 oz pre-cooked sausage (like sweet Italian), sliced into 1/2 in. coins
  • 1 large zucchini, sliced into 1/2 in. coins
  • 1 pint cherry tomatoes
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • crushed red pepper flakes, to taste
  • Salt and pepper, to taste
  • Fresh basil, grated Parmesan, and ricotta, to garnish

Instructions

  • Preheat your oven to 425 degrees F.
  • Combine gnocchi, sausage, zucchini, tomatoes, seasonings and olive oil into a large bowl. Toss to combine, ensuring all ingredients are fully covered.
  • Evenly spread the mixture onto a lined baking sheet and bake for 15 minutes. Carefully toss again with a spatula, and bake for another 10-15 minutes, until the mixture develops golden brown edges.
  • Remove from oven and enjoy. Garnish with dollops of ricotta, grated parmesan, fresh herbs like basil or parsley, more olive oil, and freshly cracked salt and pepper.
