Perfect Mashed Potatoes

What's better than potatoes? Nothing, it turns out. The secret to creamy, dreamy mashed potatoes is a healthy amount of cheese.

Ingredients

  • 4 large Russet potatoes, peeled, washed, and cut into 1″ cubes
  • 1 cup milk
  • 2 – 3 sprigs each fresh rosemary and thyme
  • 1/2 stick of butter
  • 1/2 cup of shredded white cheddar cheese
  • 1/3 cup cream cheese
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Parsley, for garnish

Instructions

  • Cover potatoes with water in a large pot. Be sure to heavily salt the water.
  • Boil potatoes until fork tender.
  • While the potatoes are boiler, in a small sauce pan combine milk and fresh herbs. Bring to a simmer, reduce heat and keep warm until ready to use.
  • Went potatoes are cooked, drain the water and add the potatoes to a large bowl, or return them to the same pot.
  • Into the potatoes, add butter, cheddar cheese, cream cheese, herb-infused milk and seasonings. Adjust with salt and pepper as needed.
  • Serve warm with a large pat of butter and freshly chopped parsley.
