Perfect Mashed Potatoes
What's better than potatoes? Nothing, it turns out. The secret to creamy, dreamy mashed potatoes is a healthy amount of cheese.

Ingredients
- 4 large Russet potatoes, peeled, washed, and cut into 1″ cubes
- 1 cup milk
- 2 – 3 sprigs each fresh rosemary and thyme
- 1/2 stick of butter
- 1/2 cup of shredded white cheddar cheese
- 1/3 cup cream cheese
- 1 tsp garlic powder
- Salt and pepper, to taste
- Parsley, for garnish
Instructions
- Cover potatoes with water in a large pot. Be sure to heavily salt the water.
- Boil potatoes until fork tender.
- While the potatoes are boiler, in a small sauce pan combine milk and fresh herbs. Bring to a simmer, reduce heat and keep warm until ready to use.
- Went potatoes are cooked, drain the water and add the potatoes to a large bowl, or return them to the same pot.
- Into the potatoes, add butter, cheddar cheese, cream cheese, herb-infused milk and seasonings. Adjust with salt and pepper as needed.
- Serve warm with a large pat of butter and freshly chopped parsley.
