Perfect Mashed Potatoes
What's better than potatoes? Nothing, it turns out. The secret to creamy, dreamy mashed potatoes is a healthy amount of cheese.

Cover potatoes with water in a large pot. Be sure to heavily salt the water.
Boil potatoes until fork tender.
While the potatoes are boiler, in a small sauce pan combine milk and fresh herbs. Bring to a simmer, reduce heat and keep warm until ready to use.
Went potatoes are cooked, drain the water and add the potatoes to a large bowl, or return them to the same pot.
Into the potatoes, add butter, cheddar cheese, cream cheese, herb-infused milk and seasonings. Adjust with salt and pepper as needed.
Serve warm with a large pat of butter and freshly chopped parsley.
