Cozy Kale, Sausage, and White Bean Soup
When there's a chill in the air, sometimes all you need is a hearty bowl of soup.

Ingredients
- Olive oil
- 1 lb. sweet Italian sausage, casings removed
- 1 medium onion, diced
- 2-3 celery stalks, sliced
- 2-3 carrots, sliced
- 3 cloves garlic, minced
- Splash of white cooking wine
- 6 cups chicken stock
- 1 tsp. each of fresh rosemary, thyme, and oregano, minced
- 1 – 2 Bay leaves
- 2 cans white beans, drained and rinsed
- About 4 large handfuls of kale, washed, chopped and stems removed
- Salt and pepper
- Red pepper flakes and grated parmesan cheese, for garnish
Instructions
- In a large stock pot or Dutch oven, heat a few tablespoons of olive oil.
- Once heated, add sausage and sauté until browned and cooked through. Remove sausage from pot and set aside, leaving the remaining oil.
- Add celery, carrots, and onion and sauté a few minutes until the onions are translucent. Add garlic and sauté another minute or two.
- Deglaze the bottom of the pan with a healthy splash of wine. Pour in the chicken stock.
- Add fresh herbs, Bay leaves, and the beans. Bring to a simmer, reduce heat, cover and simmer for 15 minutes, or until the vegetables are tender. Stir occasionally.
- Add the sausage back to the pot, along with the kale. Stir until the kale is tender and cooked down. Remove and discard Bay leaves.
- Serve hot. Garnish with red pepper flakes and grated parmesan cheese.
