Easy Weeknight Broccoli Cheddar Soup

Craving comfort? This creamy broccoli cheddar soup is just the ticket. Fresh broccoli meets sharp cheddar cheese in the ultimate weeknight hug in a bowl.

Ingredients

  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 1 cup onion, chopped, about 1/2 of an onion
  • 1 cup carrots, shredded, plus more for garnish
  • 1/2 cup celery, shopped, about 2 ribs
  • 1 pound broccoli, roughly chopped, reserve some florets for garnish
  • 3 cloves garlic, minced
  • 1/4 cup flour
  • 32 oz. reduced sodium chicken broth
  • 1 cup half and half
  • 2 cup freshly cheddar cheese
  • 1/4 tsp ground nutmeg
  • 1 tsp mustard powder
  • 1/2 tsp paprika
  • Freshly cracked salt and black pepper

Instructions

  • In a large stock pot or Dutch oven, heat olive oil and butter.
  • Add onion, carrots, and celery and sauté until softened, a few minutes.
  • Add chopped broccoli and continue to sauté a few more minutes, or until the broccoli has brightened in color.
  • Add garlic and sauté until minute until fragrant.
  • Sprinkle in flour and continue to sauté until the flour is no longer raw, about 2 to 3 minutes.
  • Pour in chicken broth and bring soup to a boil. Reduce the heat to a simmer, and cover until the broccoli is fork tender, between 20 to 30 minutes, stirring every so often.
  • Remove the lid and turn the heat to low. Using an immersion blend, give the soup a few pulses until it reaches your desired consistency.
  • Pour in half and half and stir until combined .
  • Add cheddar, nutmeg, mustard powder, and paprika. Stir to combine. Season with plenty of freshly cracked salt and black pepper to taste.
  • Garnish with shredded carrots and reserved broccoli florets if desired.
