Ingredients
- Olive oil
- 1 1/2 pounds baby potatoes, halved
- 4-5 cloves garlic, minced
- 3-4 sprigs each of fresh rosemary and thyme, roughly chopped
- 1/4 cup grated parmesan
- Salt and pepper
Instructions
- Preheat oven to 400 degrees F.
- In a large mixing bowl coat potatoes with plenty of olive oil. Thoroughly mix in garlic, herbs, parmesan cheese, and plenty of freshly cracked salt and pepper, ensuring each potato is covered with ingredients.
- Spread potatoes in an even layer on a baking sheet.
- Bake for 20 minutes. Remove baking sheet from oven and carefully stir and flip potatoes.
- Return baking sheet to oven and bake for another 20 – 25 minutes until potatoes are golden brown.
- Finish with flaky sea salt and a few more cranks of freshly ground black pepper if desired.
